Brie Brûlée

This dish is mashup between baked Brie and crème brûlée, complete with a crispy sugar topping. It makes a wonderful appetizer or starter for before a meal.

Special equipment:
a kitchen torch
  1. Preheat the oven to 350 degrees F.
  2. Using a serrated knife, cut the top layer of rind off the wheel of Brie. Place on a foil-lined baking sheet. Top with the honey and rosemary. Bake to soften and warm, 5 to 6 minutes. Keep a watchful eye at this step as the Brie will melt if you leave it in the oven too long.
  3. Remove the Brie from the oven and immediately sprinkle over the sugar in a thin layer. Using a kitchen torch, brûlée the sugar until a golden amber color. Let rest 10 minutes to harden before transferring to a cutting board with the accompaniments.
