Slow Roasted Chicken and Vegetables

Most of us cook a chicken in the oven, but it is one of those ingredients that can also benefit from a slow cook at a lower temperature. This brings out some amazing flavors and textures that you just don’t get with quicker cooking. The result is tender and juicy meat that’s unimaginably good.

  1. Preheat the oven to 300 degrees F.
  2. Mix the oil, herbs, salt, pepper, garlic and lemon zest in a bowl. Set aside.
  3. Add the potatoes, carrots and onions to the bottom of a roasting pan. Toss with half of the herby oil mixture and spread in an even layer.
  4. Top the vegetables with the chicken, then brush it with the remaining herby oil mixture to cover.
  5. Cook in the oven, basting again with the herby oil after 1 hour of cooking, until the chicken skin is brown and the meat is tender, about 2 hours. Remove and let the chicken rest for 20 minutes before transferring to a cutting board and portioning. Serve the chicken with the vegetables on the side. Spoon over any pan drippings if desired. Top with the reserved herbs.
