With cottage cheese being the latest social media food craze, Ree has used some to create a light, luscious, super-simple treat. Cottage cheese is a great swap when you are eating a little lighter and it’s delicious when whipped and slightly sweetened.

Directions
Preheat the oven to 450 degrees F.
Add the berries to a small baking sheet. Toss with the brown sugar. Roast in the oven until they’ve deepened in color and created a syrup, about 12 minutes.
Meanwhile, add the cottage cheese, maple syrup and vanilla bean paste to a small food processor. Process until smooth.
Divide the cottage cheese mixture into two small bowls. Create a well in the middle with the back of a spoon. Add the berry mixture to the middle, drizzling the syrup from the pan over the top.
