We eat some version of this rice bowl at least once a week. I use my rice cooker constantly, and I either pick up a rotisserie chicken, or roast chicken and keep it in the fridge for a couple of days. I like putting all the toppings in individual bowls and we can each make our own bowl, so everyone is happy.

Directions
In a small bowl, whisk the lime juice, soy sauce, ginger, toasted sesame oil, sugar and garlic.
In a medium skillet, heat the avocado oil over medium-high heat. Add the red bell pepper and cook until tender. Add the shredded chicken and toss to heat through. Add the soy sauce mixture and cook about 2 minutes. Stir in the water chestnuts, scallions and pepper flakes. Cook an additional 2 minutes.
Serve over white rice with the desired toppings.
