Skillet-Fried Oysters

  • Yield: Serves 4

Ingredients

3 tablespoons butter or margarine

3 tablespoons vegetable oil

2 dozen shucked large raw oysters, drained

2 eggs, beaten

3 cups cracker crumbs

3/4 to 1 teaspoon salt

1/4 teaspoon pepper

Snipped parsley or paprika

Lemon wedges

Directions

  1. Heat the butter and oil in a skillet. Roll the oysters in the egg and crackers crumbs and sprinkle with salt and pepper. Saute the oysters, turning once, until golden brown. Sprinkle the parsley or paprika on top and garnish with lemon.
