I love a boardwalk so much, I moved close to one, and it wasn't summer until I strolled the uneven planks of Coney Island, Brooklyn to get a Coney dog and an Italian ice. Anywhere else, I want a slushy or beer, if it's legal on the boardwalk, and fish tacos. A grilled fish taco just feels like summer and is great in a white corn tortilla, but the Texan in me loves the chewy texture of a flour tortilla juxtaposed with the crunchy-sweet slaw on top and the charred fish nestled inside. I could eat fish tacos every week of my life with no complaints!

Cast iron griddle
For the slaw: Add the mangos, red onion, scallion, cilantro, cabbage and lime juice to a large bowl. Toss and taste, then season with the salt and sugar. Refrigerate until ready to serve, but not overnight.
For the fish: Preheat a cast-iron griddle over medium heat.
Brush all sides of the fish liberally with lime juice. In a small bowl, mix the cumin, paprika, garlic powder and onion powder. Sprinkle this mixture over the fish, then sprinkle with salt and a few grinds of pepper and let sit at room temperature for 5 to 10 minutes.
When ready to cook, pour some oil on the griddle and add the fish, seasoned side down, along with the jalapeños. Cook the fish on one side until it easily releases and is golden and ready to flip, 5 to 6 minutes. Flip the fish and break into pieces while cooking until cooked through and flakey, an additional 3 to 4 minutes. Remove to a tray and spritz with fresh lime juice.
Serve the tacos. Place an equal amount of fish and jalapeños in each warmed tortilla and top each with an equal amount of slaw and a shake of hot sauce.
