Special equipment:
a deep-fryer or deep-fry thermometer
For the tostones: Heat some oil to 375 degrees F.
Fry the plantains for about 3 minutes. Remove and press into 2 1/2-inch cups to mold them. Fry again until crisp and golden.
For the garlic shrimp sauce: Melt the margarine in a saute pan. Sauté the garlic gently. Add the white wine and reduce. Add the milk slowly and cook until creamy, about 20 minutes. Add the shrimp and cook until just done. Fill the tostones with the shrimp and garnish with the parsley.
