1/2 pound purple potatoes, diced

1/2 pound red potatoes, diced 

2 golden beets, peeled and diced 

2 cloves garlic, chopped 

1/2 yellow onion, diced 

1 1/2 tablespoons olive oil 

Kosher salt and freshly ground black pepper 

1/4 cup fresh parsley, roughly chopped 


Preheat the oven to 450 degrees F.

Mix together the potatoes, beets, garlic and onions in a large bowl. Add the oil and season with salt and pepper. Spread the mixture over a sheet pan and bake until the vegetables are tender and starting to brown, 25 to 30 minutes. Top with the parsley and serve warm.
