Ingredients
  • Crust:
  • 1 1/2 cups chocolate graham cracker crumbs
  • 2 tablespoons canola oil
  • 1 tablespoon coffee liqueur
  • Cheesecake:
  • 8 ounces firm tofu
  • 1/2 cup part-skim ricotta cheese
  • 4 ounces light cream cheese
  • 1/3 cup maple syrup
  • 2 egg whites
  • 1 egg
  • 3 tablespoons coffee liqueur
  • 1/4 cup cocoa powder
Directions

Preheat oven to 350 degrees F.

Mix the graham cracker crumbs with the canola oil and 1 tablespoon coffee liqueur. Then press into a 9-inch spring form pan.

In the bowl of a food processor, combine all remaining ingredients until smooth. Spread over the crust and bake for 1 hour. Chill in the refrigerator overnight before serving.
