We can always count on Molly Yeh to put fun, festive twists on classic dishes — pastrami meatballs and tahini milkshakes, anyone? That’s why we were especially excited to see her latest hamantaschen recipes on Instagram. The triangular pastries are typically eaten during the Jewish holiday of Purim and traditionally are filled with poppy seeds or jam. Blueberry Cream Cheese Hamantaschen

Molly’s trick for the perfect hamantaschen? Egg wash. She brushes her dough with egg wash before filling to prevent the pastries from flopping open in the oven. That’s why her cookies, like these beautiful blueberry cream cheese versions, always maintain their perfectly pointed shape.

Salt & Vinegar Potato Hamantaschen

Sour and savory? Yes, please! Molly puts an acidic twist on knish-inspired hamantaschen with kosher salt, parmesan cheese, russet potatoes and distilled white vinegar. For a touch of sweetness, serve these yummy treats with ketchup.

Marzipan Sprinkle Hamantaschen
