Heat the oil in a large skillet over medium-high until shimmering. Add the green beans, 1/2 teaspoon salt and 1/4 cup of water. Cover and cook until the green beans are al dente, 3 minutes.
Uncover, add the coriander, garlic and 1 1/4 teaspoons pepper, and toss to coat. Add the almond butter, reduce to low heat and cook, tossing frequently, until the almond butter melts and the green beans are evenly coated, 2 to 4 minutes. When the green beans are done, they should still retain a slight crunch and the spices should be very fragrant. Turn the heat off and stir in the lemon juice. Taste and adjust the salt as needed. Serve with rice, paratha or roti if desired.
