Don't let the summer season's bounty of zucchini spiral out of control — spiralize it instead! Here are 11 unexpected ways to reconstruct that zucchini into something so much more than it was before.

Spiralized Zucchini

There are many versions of the spiralizer available. The Veggetti, an inexpensive hand-held version, cuts the zucchini into either thin (think angel hair) or thick (spaghetti) strands. It is available at most large chain and department stores as well as online. 

Zusketti

One of the most-exciting things about zucchini noodles (aka "zoodles") is how well they emulate pasta in classic dishes, such as this "zusketti" crowned with marinara and a giant meatball. Simply top the spiralized noodles with your favorite fixings. Bonus: The raw zoodles heat up in the microwave in 3 minutes or less for a quick and satisfying meal.  

Pulled Pork Sandwich with Zucchini Slaw

Coleslaw is a perfect way to use up an abundance of zucchini. One small zucchini makes about a cup of zoodles. Either chop them into smaller strands or leave them long as shown, then swap them for cabbage in your favorite slaw recipes. Topping pulled pork or chicken sandwiches is a must! 

Zushi Rolls

Thin strands of raw zucchini are an unexpected addition to homemade sushi rolls, and the spiralizer makes them so much easier to prepare than julienning. 

5-Minute Bacon, Egg and Cheese Zoodle Breakfast

This low-carb breakfast cooks in the microwave in 5 minutes or less. First, microwave 2 slices of bacon and set aside. Spiralize a small zucchini, crack on 2 eggs, and add salt and pepper. Microwave for 2 to 3 minutes, until the eggs are set. Crumble on bacon, toss on Parmesan cheese and add a couple of small pats of butter.

Baked Zucchini Shoestring Fries

Toss spiralized zucchini with a beaten egg, then dredge in seasoned flour and bake at 350 degrees F for about 20 minutes until brown and crispy. 

Zucchini Latkes

Substitute spiralized zucchini for the potatoes in your favorite potato pancake recipe. These are topped with scallions and Greek yogurt for a summery twist on a cold-weather favorite. 

Zincinatti Chili

Prepare Cincinnati-style chili as usual, then pile it on top of raw zucchini noodles for a lower-calorie, healthier five-way that's low-carb and gluten-free. 

Add Crunch to Sandwiches

Spiralize zucchini, then chop it and use instead of sprouts or lettuce. 

Cold Zoodle Salad

Try zoodles in cold pasta salads. Pictured is a Greek pasta salad that I traditionally make with thin spaghetti. The dish remains the same except that spiralized zucchini was used, cup for cup, in place of pasta.

Swap out half of the pasta in your favorite mac and cheese recipe for zoodles without losing any flavor or comfort factor.

Beef Zoodle Stroganoff

For a summery, low-carb version of a creamy and comforting winter favorite, simply top raw strands of zucchini with hot stroganoff. The sauce will heat the strands without them losing their slight "al dente" crunch.
