Apple-Pecan Salad with Honey Vinaigrette

7 cups spring mix lettuce

1 medium apple, sliced

1/3 cup pecan halves, toasted

1/4 cup apple cider vinegar

4 Tbsp. honey

2 Tbsp. olive oil

1/2 tsp. mustard

1/8 tsp. salt

1/8 tsp. pepper

1 cup shredded Parmesan cheese


  1. In a serving bowl, combine the lettuce, apple and pecans. In a small bowl, whisk the vinegar, honey, oil, mustard, salt and pepper. Pour over salad; toss to coat. Sprinkle with cheese.
