Ingredients

1 pound baby artichokes, cleaned, trimmed and quartered

1 head endive, julienned

1 head radicchio, shredded thinly

1/2 cup fresh lemon juice

1/2 cup olive oil

Salt and freshly ground pepper

Directions

  1. Toss all ingredients together in a large bowl and season with salt and pepper to taste.
