Caramelized Crusted Potatoes with French Onion Dip

Potato chips with onion dip is the ultimate TV watching snack. This recipe takes it to the next level. Instead of potato chips, this recipe has Parmesan crusted baby potatoes that you can dip into rich and delicious French onion dip.

  1. For the potatoes: Preheat the oven to 400 degrees F.
  2. Par-cook the potatoes in boiling water for 6 minutes. Drain and let cool. Slice the potatoes in half.
  3. In a medium bowl, combine the butter, Parmesan, pecorino, smoked paprika and garlic powder. Season with salt and pepper. Evenly press the mixture into the bottom of 9-by-13-inch baking dish. Layer the potatoes, cut side down, on top of that. Bake for 15 to 20 minutes, until the potatoes are cooked all the way through. Remove from the oven and let cool for about 10 minutes; this will allow the cheese mixture under the potatoes to crisp up. Cut into wedges or squares and carefully remove from the baking dish with a spatula, making sure to keep the Parmesan coating on the potatoes.
  4. For the onion dip: Meanwhile, preheat a large skillet over medium heat, then add the oil and butter. Let the butter melt, then add the onions. Reduce the heat to low and cook until softened and just begin to turn golden brown, about 15 minutes. Deglaze with the white wine and cook until reduced and the onions are soft and golden, about 20 minutes. Remove from the heat and let cool.
  5. In a large bowl, combine the cream cheese, sour cream, brown sugar, parsley, shoyu, balsamic vinegar, Worcestershire, chives and scallions, then fold in the cooled onions and season with the dark soy sauce, salt and pepper.
  6. Serve the potatoes with the onion dip.
