Special equipment:
a deep-fryer or deep-fry thermometer
For the chicken: Place the chicken in a mixture of all-purpose flour and seasoned flour with the seasoned salt, granulated garlic, onion powder and black pepper.
Make an egg wash by beating the eggs in a bowl with 1 cup water until combined.
Coat the chicken in the flour mixture, then the egg wash, then the flour again. Set the breaded chicken on parchment paper or plastic wrap in the fridge until ready to fry.
For the collard greens: Add the onions to a stockpot or Dutch oven with the olive oil. Cook on medium heat for about 4 minutes, then add the garlic and cook an additional 2 minutes. Add the chicken stock and 4 quarts water. Add the smoked turkey with the red pepper flakes and vinegar. Bring to a boil, then simmer for about 30 minutes. Remove the smoked turkey and set aside to cool, then pull the meat from the bones. Add the collard greens and let cook for about 35 minutes. Add the smoked turkey meat back to your greens, then reduce the heat to a simmer and let finish cooking until tender, about 30 minutes.
For the grits: In a 6-quart pot, add the butter, heavy cream, chicken stock and 3 quarts water, then bring to a boil. Whisk in the grits, whisking constantly, until smooth. Reduce the heat to low. Let cook until the grains are tender, 30 to 35 minutes.
For the hot honey: In a 2-quart saucepan, add the hot sauce, butter, honey and brown sugar. Bring to a boil. Make a slurry of the cornstarch and 2 tablespoons water in a small bowl, then add it to the boiling sauce, slowly whisking until thickened. Remove from the heat and set aside.
Heat the vegetable oil to 350 degrees F in a deep-fryer or Dutch oven.
Add the chicken to the hot oil and let cook until the chicken reaches an internal temperature of 165 degrees F, about 8 minutes.
Place a couple spoonfuls of grits in the center of a plate, then collard greens next to them. Place the fried chicken on opposite sides and drizzle with the hot honey. Enjoy!
