This bulgur salad is a mashup of two classics: a sweet and crunchy Waldorf salad and a fresh, herb-forward tabbouleh. Chopped apples, celery, grapes and toasted walnuts combine with bulgur, parsley and a light olive oil dressing to create a refreshing salad with loads of texture and flavor. It’s a perfect make-ahead side dish and can even be eaten on its own for a light lunch.

Directions
Pour 1 cup boiling water over 1/2 cup bulgur in a large bowl; season with 1/2 teaspoon kosher salt. Cover tightly and let stand until tender, 30 minutes; drain. Chop 1 cup fresh parsley, 1 red apple, 1 celery stalk and 1/4 cup toasted walnuts. Stir into the bulgur along with 2 tablespoons olive oil, 1 tablespoon each lemon juice and cider vinegar and 1 cup halved grapes. Season with salt and pepper.
