Coconut Mojito

Use coconut water in this rum cocktail for a burst of refreshing tropical flavor.

1 cup packed fresh mint leaves

1/2 cup fresh lime juice

1/2 cup simple syrup

2 cups coconut water, chilled

1 cup white rum, chilled

4 thin lime rounds, for garnish (optional)


  1. Put the mint, lime juice and simple syrup in a pitcher. Muddle the mint leaves with the end of a wooden spoon until crushed. Pour in the coconut water and rum. Add ice to fill the pitcher, and stir to combine. Pour into cocktail glasses and garnish each with a lime round if using.
