Yubuchobap is a flavorful Korean dish of fried tofu pouches stuffed with seasoned rice. One popular variation includes imitation crab meat, which adds a slightly sweet seafood flavor to the filling. Directions
Mix the rice, imitation crab, mayonnaise, fish sauce, mirin, rice vinegar, sesame oil, dried seasoning mix from the tofu pouches and 1/2 teaspoon salt in a large bowl until thoroughly combined.
Arrange the tofu pouches on a large plate and pat dry gently with a paper towel. Working one at a time, open a pouch carefully without ripping it and spoon about 2 tablespoons of the rice mixture into the pouch. It’s okay if the filling falls out a bit; use your fingers to press down firmly on the filling to pack it into the pouch as neatly as possible. Set the packed tofu pouches on a serving platter rice-side up. Serve immediately.
