This summery chicken is coated in a dry rub evoking the herby, sweet, spiced flavors of dill pickles. Grill the chicken until crispy, charred and juicy, then serve with a white barbecue sauce packed with the punch of chopped pickles and horseradish.

Directions
Make the chicken: Cut the backbone out of each chicken using kitchen shears. Place skin-side down on a cutting board. Cut each chicken in half through the middle of the breastbone. Transfer to a large rimmed baking sheet.
Season the chickens generously with salt and black pepper. Combine the dried dill, brown sugar, coriander, granulated garlic, mustard powder, red pepper flakes and onion powder in a small bowl. Season the chicken all over with the spice mix. Cover and refrigerate at least 2 hours and up to 8 hours.
Meanwhile, make the sauce: Whisk together the mayonnaise, pickles and brine, the horseradish, vinegar, mustard, brown sugar, 1/2 teaspoon black pepper and the dried dill in a medium bowl. Adjust the seasoning, if needed. Refrigerate until ready to serve.
About 30 minutes before grilling, remove the chicken from the refrigerator and preheat a grill to medium. Oil the grill grates. Put the chicken on the grill, skin-side down, and cook, rotating and flipping as needed, until the skin is browned and crisp and a thermometer inserted into the thickest part of the thigh registers 165 degrees F, 35 to 45 minutes (adjust the heat if the chicken starts to get too dark).
Transfer the chicken to a cutting board and let rest 15 minutes. Carve into pieces and serve with the sauce.
