High-Protein Chicken Tzatziki Bowl

This Mediterranean-inspired, protein-packed dinner bowl is perfect for your next weeknight meal. We use plenty of pantry ingredients and store-bought items, including rotisserie chicken, roasted red pepper hummus and marinated artichokes, for a meal that comes together in a flash but doesn’t skimp on flavor or protein – each serving provides 59 grams. We top it off with an easy tzatziki sauce for a refreshing tang and crushed pita chips for a bit of crunch.

  1. Stir the yogurt, shredded cucumbers, garlic, lemon juice, 2 tablespoons of the dill, 1/2 teaspoon salt and several grinds of pepper in a medium bowl until well combined. Cover and refrigerate until ready to serve.
  2. Cook the brown rice according to the package directions. Keep warm until ready to serve.
  3. Heat the oil in a large skillet over medium heat. Add the chickpeas and chicken and cook until warm throughout, 2 to 3 minutes. Stir in the lemon zest and remaining 1 tablespoon dill.
  4. To serve, schmear 2 tablespoons of hummus on the side of 4 dinner bowls. Spoon in the warm rice, then top with the chicken and chickpeas, tomatoes and sliced cucumbers; season with a pinch of salt and pepper. Top with the artichokes and a drizzle of the tzatziki-yogurt sauce, then sprinkle with the crushed pita chips.
