This peanut butter popcorn is the perfect balance of sweet, salty and satisfying. Plain popcorn is tossed in a peanut butter caramel, then baked until golden and caramelized. It’s a quick, healthy, feel-good snack that hits all of the cravings, whether you’re curling up for movie night or need a mid-afternoon pick-me-up.

  1. Preheat the oven to 300 degrees F; line a baking sheet with parchment.
  2. Add the popcorn and peanuts to a large bowl.
  3. Melt the brown sugar and honey in a medium saucepan over medium heat. Once the mixture is just boiling, stir in the peanut butter until completely melted and smooth. Remove from the heat and stir in the baking powder until combined. Be careful, the mixture will bubble and foam up.
  4. Immediately pour the caramel over the popcorn mixture and toss until evenly coated. Transfer to the prepared baking sheet and spread into an even layer.
  5. Bake, tossing halfway through, until the peanut butter caramel has set and turned slightly darker golden brown, 15 to 18 minutes. Cool completely on the baking sheet. Once cool, break any large clumps apart.
