Pimento cheese, affectionately called the pâté of the South, is a classic spread made with mayo, cheddar and pimentos. We combined it here with another Southern favorite: macaroni salad!

Directions
Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package directions for al dente. Drain, then rinse with cold water and shake the colander dry to remove any excess water.
Combine the cheese, mayonnaise, pimentos, scallions and cayenne in a large bowl. Stir in the macaroni to coat, then season with salt to taste.
