This pistachio hummus puts a fresh spin on the classic by swapping tahini for pistachio paste, giving the dip a sweet, buttery richness and a vibrant green hue. A generous sprinkle of a pistachio dukkah adds crunchy, aromatic pops of sesame and warm spices on top. Perfect for scooping up with crisp vegetables or warm flatbread.

Directions
Make the dukkah: Combine the pistachios and sesame seeds in a small skillet. Toast over medium heat, shaking the pan periodically, until the sesame seeds just start to brown, 1 to 2 minutes. Add the coriander and cumin seeds, reduce the heat to medium-low and continue cooking until the sesame seeds and spices are browned, about 2 more minutes. Transfer to a food processor and let cool slightly, about 5 minutes. Pulse until the pistachios are coarsely ground and the spices are cracked. Remove to a small bowl, reserving the food processor bowl and stir in 1/8 teaspoon salt; set aside.
Make the hummus: Add the chickpeas and 1/4 cup chickpea liquid, 1/4 cup water, the cilantro, pistachio butter, lemon zest and juice, garlic, olive oil, 3/4 teaspoon salt and a few grinds of pepper to the food processor. Process until smooth and creamy, scraping down the sides as needed, about 1 minute.
Transfer the hummus to a shallow serving bowl. Use the back of a spoon to create swirled grooves. Drizzle with olive oil and sprinkle the dukkah generously on top. Serve with vegetables.
