1/4 cup white wine
1/4 cup vinegar
2 tablespoons sugar
1 teaspoon each fresh dill, tarragon, and mint, finely chopped
2 cups assorted melons, cut into 1-inch squares
In a large bowl, mix wine and vinegar. Add sugar and herbs, mix until sugar is dissolved. Add melons, then chill at least 3 hours before serving.
