a high-speed blender
For the pistachio syrup: In a small saucepan, add the sugar, pistachios and 3/4 cup water. Bring to a simmer and allow to cook until the sugar dissolves and the nuts soften, 8 to 10 minutes. Cool for 1 hour to let the pistachios infuse the liquid.
Blend the syrup in a high-speed blender, then let cool completely. Strain if needed through a fine mesh sieve. Store in an airtight container in the fridge for up to 4 days.
For the frozen latte: Dip the rims of your serving glasses in the syrup, then coat with the chopped pistachios.
In the carafe of a blender, add the milk, pistachio cream, espresso and vanilla extract. Blend until smooth.
Add the ice and blend again until it has a chilled consistency.
Drizzle the pistachio syrup around the walls of the glasses to make a design. Divide the drink between the glasses. Garnish with more chopped pistachios.
