Coffee Chili Rubbed Turkey Tenderloin with Red Eye BBQ Sauce

This spice rub recipe can be used for whole turkey breasts or even a whole roasted turkey. It is so deep and rich, it really makes the tame turkey meat SING.

Directions

  1. For the spice rub: Put the chile powder, coffee crystals, turbinado sugar, salt, coriander, granulated garlic and granulated onion in a small bowl and mix thoroughly.
  2. Place the tenderloins on a work surface. Sprinkle the rub all over the tenderloins and pat it onto the meat. Set on a rack sitting on a baking sheet. Let the turkey marinate in the refrigerator, covered, for at least 4 hours or up to overnight.
  3. Preheat the oven to 325 degrees F.
  4. Drizzle the turkey with the olive oil and bake until the internal temperature reaches 165 degrees F, 50 to 55 minutes. Remove from the pan and rest for 10 minutes before slicing.
  5. For the sauce: Meanwhile, melt the butter in a heavy saucepan over medium heat. Add the bacon, onion and garlic and cook until lightly browned, about 3 minutes. Stir in the coffee, ketchup, Worcestershire sauce, molasses, mustard, brown sugar and half of the cream and let the mixture gradually come to a boil. Reduce the heat slightly and let the sauce simmer, whisking from time to time, until thick and richly flavored, about 10 minutes. Season with salt and pepper and add the remaining cream.
  6. Slice the turkey and top with the BBQ sauce.
