Grilled Romaine Salad with Smokey Chipotle Cashew Dressing

1 head romaine, cut into half

1/4 cup roasted, unsalted cashews

1/2 cup mayo

1/4 cup chipotles in adobo sauce (from a can)

Juice of 2 limes

1 clove garlic

Kosher salt

Freshly cracked black pepper

Bacon, cooked and crumbled, for serving

Cotija, for serving

Scallions, sliced, for serving


  1. In a food processor or blender add the cashews, mayo, lime, chipotles, garlic, salt and pepper and pulse together until smooth.
  2. To a grill or grill pan set to medium heat, grill the romaine on each side for 1 minute and 30 seconds, until wilted and slightly charred. Remove to a plate and top with the dressing, bacon, cotija and scallions.
