There are a lot of things I love about California but one of my favorites is definitely the avocado. Grilling is a great way to prepare those slightly unripe ones when you just don’t have the patience to wait another day or two. The “cranch” here is a mashup of two favorite dressings, Caesar and ranch; the creamy, super-flavorful combination works particularly well on this salad.

Directions
For the cranch dressing: Crush the anchovies, garlic and salt in a large bowl with a fork. Whisk in the egg yolks, lemon juice and Parmesan. Slowly drizzle in the olive oil and whisk well to emulsify. Whisk in the buttermilk, sour cream, Worcestershire, dill, parsley, chives, tarragon and black pepper to taste. Refrigerate while preparing the salad.
For the salad: Preheat a grill. Brush the flesh side of the avocados with the olive oil and season with salt and pepper. Place over the direct heat of the grill, cut-side down, and grill until lightly charred, about 2 minutes. Remove from the grill and set aside.
Scoop the avocado into large chunks and toss into a bowl. Add the onion, cucumber, grape tomatoes, cilantro and lime zest and juice. Season to taste with salt and pepper. Serve with the cranch dressing. Any leftover dressing can be stored in the fridge for 1 week.
