Because there aren’t many ingredients and steps in roasting mushrooms, it’s important to get every single part of the technique just right. Michele Urvater, a renowned chef, chef-instructor, and caterer is sharing her expertly developed and tested recipe for oven roasted mushrooms. She nails every small detail, and they all add up into a rich, umami-packed side dish that you are sure to return to time and time again.
Don’t wash the mushrooms; wipe or brush the dirt off. Mushrooms are extremely absorbent; they will fully soak up any liquid, which is a good thing in the case of butter or sauce. However, mushrooms will also absorb water, which will prevent them from properly browning. Instead of washing mushrooms, use a damp cloth or brush to gently wipe off any dirt or sediment.
Roast the mushrooms in a single layer. The goal of roasting mushrooms in the oven is to get them browned and crisp. If you pile tons of mushrooms on top of each other, they will still cook, but they will steam. You’ll miss out on all the flavor that comes when mushrooms brown. Place them in a single layer to ensure they have enough space around them for each of them to be evenly exposed to heat.
Stir the mushrooms occasionally while they roast. The roasted mushrooms will benefit from an occasional stir to guarantee that they brown evenly. If you leave them to roast in one spot for the full duration of the roast, some parts of the mushrooms will be browner and more cooked than others. Stirring every once in a while will yield evenly golden brown and cooked results.
