Roasted Potatoes

6 potatoes, skin removed, cubed

Salt and pepper, to taste

1/4 cup chopped flat-leaf parsley

1/2 cup Pecorino Romano

1/4 cup bread crumbs

Olive oil


  1. Season the potatoes with salt and pepper. Cover potatoes with the parsley, cheese, and bread crumbs. Drizzle the olive oil over the potatoes. Bake in a 350 degree oven until brown and tender.
