Cooking broccoli rabe or rapini in milk and sugar is my secret technique. It makes the bitterness of the greens more subtle and gives them a tender bite that’s truly delicious. Paired with sausage, gremolata and lots of Parmesan, it makes for a sandwich that’s addicting with each bite.

Directions
For the roasted broccoli rabe: In a large pot, heat the milk, sugar and 2 quarts water, and bring to a boil over medium-high heat. Prepare an ice bath next to the stove. Put the broccoli rabe in the boiling milk and cook for 6 minutes.
Remove the broccoli rabe from the milk and place in the ice water to shock. Remove, then large chop.
Place a 14-inch sauté pan with the olive oil and heat to medium-high heat. Add the chopped broccoli rabe and sauté for 7 minutes.
Add the garlic and pepper flakes and sauté for an additional 2 minutes (the garlic should not get any color). Season to taste. Remove from the heat and allow to cool to room temperature.
For the gremolata: In a large bowl, mix together the parsley, olive oil, basil, vinegar, garlic, pepper flakes and lemon juice. Add salt to taste.
For the hero: Preheat the grill, a grill pan or cast-iron skillet to medium-high heat.
Place the sausages on the grill and let cook for about 5 minutes. Rotate 90 degrees and cook for an additional 5 minutes. Continue to turn and cook until all four sides are seared, about 10 minutes more
Preheat the oven to 350 degrees F.
Cut the hero rolls in half, but not all the way (they should look like hot dog buns).
Place the rolls in the oven and warm for about 7 minutes (the outsides should be crunchy and the insides should be soft).
Combine the broccoli rabe, olive oil, vinegar and parsley in large bowl and season with the salt and pepper.
Place one sausage link on a hero roll. Top the sausage with 1 cup broccoli rabe mixture. Spoon 1/2 cup gremolata on top of the sandwich.
Finish with 3/4 cup shaved Parmesan. Repeat the process with the remaining rolls and filling. Serve and enjoy!
