Shaved Fennel Salad

10 ounces arugula leaves

2 oranges, segmented

1 small bulb fennel, thinly sliced

3 tablespoons olive oil

1 lemon, juiced

Kosher salt and freshly ground black pepper


  1. In a large bowl, combine the arugula, oranges and fennel. Add the olive oil and lemon juice and toss to combine. Season with salt and pepper.
  2. Serve immediately.
