One of the best things about living in New Jersey are the diners and the statewide favorite: Disco Fries. It's just a gussied-up plate of fries topped with cheese sauce and brown gravy. Some think it's the NJ answer to Canada’s poutine, which still has the gravy, but uses fresh cheese curds that get melted by the gravy. This is my version, using tots and adding a bit of heat. If you can't find gochujang or wait to order it online, use your favorite hot sauce. This is simple, yet satisfying. Order up!

  1. For the cheese sauce: In a medium pot on medium heat, add the heavy cream, Cheddar, gochujang, and a pinch of salt and pepper. Cook, stirring to melt the cheese, until the cheese sauce forms and thickens, 6 to 8 minutes. Keep warm.
  2. For the gravy: In a large pan with straight sides on medium heat, add the flour and butter. Move these around and cook until the color changes to a light-medium brown. Add the garlic, stock, Worcestershire sauce, a pinch of salt and a few grinds of black pepper. Cook, stirring, until the gravy thickens, about 3 minutes.
  3. Divide and place the tots in serving dishes and drizzle with the cheese sauce and gravy, then top with the scallions and parsley. Serve warm with an orange twist in the middle of each serving.
