This dish is one that hits all the flavor and texture notes. I love how the caramelized veggies pair with the cool, dilly tzatziki sauce (make extra and store in your fridge!). Top with a little crunch from breadcrumbs and you've got everything you need in one bite. Don't be afraid to grab the freshly cubed and packaged squash in the produce section — shortcuts are your friend.

Directions
For the tzatziki sauce: Make and chill. In a small food processor, combine the yogurt, cucumber, garlic, hot sauce, lemon zest, lemon juice and dill and blend until smooth. Taste and season with salt and a few grinds of black pepper. Refrigerate in a sealed container at least 1 hour before serving.
For the roasted eggplant and squash: Preheat the oven to 375 degrees F. Toss the eggplant with salt and allow to sit in a colander set over a bowl for 10 minutes or so to remove the moisture.
In a large bowl, toss the squash and eggplant together. Drizzle with the olive oil and season with salt, pepper and paprika. Transfer the vegetables to a sheet pan and roast until golden brown and cooked through, 40 to 45 minutes.
Transfer the vegetables to a serving bowl and garnish with lemon juice to taste and parsley. Dollop the tzatziki on top of the eggplant. Sprinkle with breadcrumbs if desired.
