Herb Mashed Cauliflower

1 head cauliflower, cut into florets

1 container (6 ounces) 0% plain Greek yogurt

1 tablespoon butter

2 garlic cloves, roughly chopped

2 tablespoons chopped fresh dill, plus additional for garnish

2 tablespoons chopped fresh flat-leaf parsley, plus additional for garnish

Kosher salt and freshly ground black pepper

2 tablespoons finely grated Parmigiano-Reggiano cheese


  1. Bring a medium pot of water to a boil. Add the cauliflower and let cook until fork-tender, about 8 minutes. Drain thoroughly and transfer to a food processor. Add the Greek yogurt, butter, garlic, dill, and parsley and process until creamy. Season with salt and pepper to taste, add the Parmesan, and process until just combined.
  2. Transfer to a bowl and garnish with more dill and parsley. Serve hot.
