Combine the butter, bleu cheese, mayonnaise, sour cream and dry rub in a saucepan on medium-high heat until melted, stirring occasionally. Add the hot sauce and let simmer for 5 minutes, then remove from the heat and pour into a blender. Blend until smooth.
Preheat the oil in a deep-fryer or Dutch oven fitted with a deep-fry thermometer to 375 degrees F.
Fry the wings, in batches, until brown and crispy, 6 to 8 minutes.
Toss the wings in a bowl with 3 ounces Spicy Bleu 17. Reserve the remaining sauce for another use.
Plate the sauced wings, then add bleu cheese crumbles on top.
Tools You May Need
When blending hot liquid, first let it cool for five minutes or so, then transfer it to a blender, filling only halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth.
