Ingredients

6 cups hydrated instant couscous

1 red onion, small dice

1 red pepper, medium dice

1/2 cup sliced almonds, toasted

1 cup golden raisins

1/2 cup flat leaf parsley, chopped

1/2 orange, zested

1 orange, juiced

1/2 lime, zested and juiced

1/2 lemon, zested and juiced

1 cup olive oil

2 tablespoons sugar

Directions

  1. Mix hydrated couscous, diced onion, diced pepper, sliced almonds, golden raisins, and parsley. Whisk the together the citrus zest and juice, olive oil and sugar. Pour over couscous mixture and toss.
