  • Pre-sliced genoa salami: We like Genoa salami for its delicate flavor and slightly softer texture compared to other hard salamis. We opted for pre-sliced salami rather than chopping it ourselves because we found it eats better—you get tender, flavorful layers that fold into the pasta naturally.
  • Marinated small mozzarella balls: Instead of plain mozzarella, we use small marinated mozzarella balls (sometimes labeled as ciliegine), which not only add a punch of herby, garlicky flavor but also give us a built-in dressing: the reserved marinade gets tossed in at the end to bring everything together.
  • Shell pasta: Shells are our pasta shape of choice here; they look elegant and act like little scoops, hugging the juicy tomatoes and salty bites of salami in a way that makes every forkful feel complete. Unlike most pasta recipes, we cook the shells past al dente—just enough to account for the fact that they’ll firm up as they cool. If you don’t have shells on hand, you could use any other type of dried short pasta instead.

  • Season the pasta water aggressively: And don’t forget to season the pasta water aggressively—cold food mutes flavor, so this is your first and best shot at infusing the dish with depth from the inside out.
  • Serve it at room temperature: This pasta salad is best served at room temperature, when the cheese is supple, the tomatoes are juicy and the flavors are most expressive. If making ahead, let it sit on the counter for about 30 minutes before serving.

This pasta salad is bright, savory and satisfying thanks to just a few thoughtfully chosen Italian ingredients. From the juicy tomatoes and marinated mozzarella balls to the salty bites of Genoa salami, the pasta shells hug all of the ingredients to make every forkful completely flavorful. Reserving the marinade from the mozzarella balls and using it as the dressing ties everything together and means you don’t have to mix up (or buy) a separate vinaigrette for the dish — an excellent bonus for a delicious salad!

  1. Bring a large pot of water to a boil. Season the water generously with salt, then add the pasta and cook until just a little softer than al dente. Drain in a colander and rinse with cold water to stop the cooking process, then transfer the pasta to a rimmed baking sheet and spread in an even layer to cool completely.
  2. Meanwhile, quarter the cherry tomatoes and place them in a large bowl. Sprinkle with 2 teaspoons kosher salt and several grinds of black pepper. Let sit for 15 minutes to allow the tomatoes to release their juices.
  3. While the tomatoes marinate, quarter the salami slices. Drain the mozzarella balls, reserving the marinade they were packed in. Cut the balls into roughly 1/2-inch pieces. Add the cooled pasta, salami, mozzarella and 1/4 cup of the mozzarella marinade to the bowl with the tomatoes and toss to thoroughly combine. Add more marinade as needed, a tablespoon at a time. Taste and season with more salt and pepper if desired.
