Directions
Preheat the oven to 350 degrees F. Spray an 8-by-8-inch baking pan with cooking spray. Line with a piece of parchment, leaving a 2-inch overhang on 2 sides. Spray the parchment lightly with cooking spray.
Combine the butter and 1 cup chocolate chips in a microwave-safe bowl and microwave in 30-second intervals until melted and smooth, stirring in between. Let cool a few minutes.
Meanwhile, combine the cottage cheese, dates, egg and vanilla in a blender and blend until smooth. Add the melted chocolate mixture, cocoa powder, baking soda and salt and blend again until smooth. Transfer to a medium bowl and stir in the flour and 3 tablespoons of the chocolate chips until just combined.
Scrape the batter into the prepared pan and smooth the top. Sprinkle the remaining 1 tablespoon chocolate chips on top. Bake until a toothpick inserted in the center comes out mostly clean with just a few crumbs attached, 22 to 25 minutes. Let cool in the pan for 20 minutes, then lift out of the pan and transfer to a rack to cool completely. Cut into 12 bars. The brownies can be stored in an airtight container at room temperature for up to 3 days.
