Mixed Greens with Sesame Dressing

Sometimes all you want is a big, refreshing green salad. This recipe combines Bibb lettuce, spring mix, baby spinach and crunchy endive. Toss with a dressing that’s lightly creamy from blending in sesame seeds and finish with lots of fresh chives.

Directions

  1. Puree 2 tablespoons each sesame seeds, chives and red wine vinegar, 1 tablespoon each Dijon mustard and water and 1 teaspoon sesame oil in a blender. Pulse in 1/4 cup olive oil; season with salt and pepper. Combine 1 head torn bibb lettuce, 4 cups baby spinach and spring mix and 2 heads sliced endive in a large bowl. Toss with the dressing and more chives. Season with salt and pepper.
