Kosher salt

1 pound linguine or other long flat pasta

2 tablespoons tomato powder

2 teaspoons dried Italian seasoning

1 cup freshly grated Parmesan, plus more for serving

8 tablespoons unsalted butter, cubed, at room temperature

Chopped fresh parsley and crushed red pepper flakes, for serving, optional

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions for al dente. Reserve 1 1/2 cups of the pasta water, then drain.
  2. Combine the tomato powder, Italian seasoning, 1/2 teaspoon salt and 1/2 cup of the pasta water in a large bowl and stir until smooth. Add the hot pasta to the bowl and toss twice to coat. Add the Parmesan and butter and continue to toss, adding up to 1 cup more of the pasta water to loosen the sauce. Top with more Parmesan and some parsley and crushed red pepper, if using.
