The classic Bellini combines Prosecco and peach nectar. For this version we switched to pear nectar, a touch of pear eau de vie, and top with cold sparkling wine. Garnish with a slice of fresh pear.

Directions
- Combine 2 ounces pear nectar and 1/2 ounce pear eau de vie in a flute. Top with 4 ounces cold sparkling wine. Garnish with a pear slice.
