This five-ingredient side relies on the unexpected pairing of pesto and ponzu sauce to create a bright, herby, tangy dressing to coat soba noodles. Cucumbers and bean sprouts are added for their cool and crunchy texture and freshness. Directions
Bring a large pot of water to a boil. Add the noodles and cook as the label directs. Drain and rinse under cold water until completely cooled; set aside.
Combine the pesto and ponzu sauce in a large bowl. Halve the cucumbers crosswise, then cut each half into planks about 1/4 inch thick; cut the planks into 1/4-inch-thick matchsticks.
Shake off any excess water from the noodles and add them to the bowl with the dressing. Add the cucumbers and bean sprouts and toss to coat. Season with salt and pepper to taste.
