This satisfying salad gets double duty from a jar of marinated artichokes: the artichokes themselves add tangy bites throughout, while the flavorful marinade combines with rendered pancetta fat to create an instant warm dressing. Packaged Parmesan crisps bring plenty of savory crunch, making this 15-minute salad substantial enough for lunch or a light supper — or pair it with grilled chicken, shrimp or salmon for an even heartier meal.

Directions
Combine the artichokes and sliced fennel in a serving bowl and toss to combine. Cook the pancetta in a medium skillet over low heat, stirring occasionally, until the fat is rendered and the pancetta is crisp, about 4 minutes. Remove to a paper towel-lined plate, reserving the fat in the skillet (you should have 2 to 3 tablespoons fat).
Increase the heat to medium and add the artichoke marinade to the skillet. Bring to a simmer and cook until reduced slightly, about 1 minute. Remove from the heat; let cool slightly, about 2 minutes.
Pour the warm dressing over the artichokes and fennel and toss. Add the baby spinach; season lightly with salt and generously with pepper. Toss well. Add the pancetta and crumbled Parmesan crisps and toss again.
