Strawberry Cottage Cheese on English Muffins

We channeled the flavors of strawberries and cream in this delicious diabetes-friendly breakfast that’s as tasty as it is healthy (see Cook’s Note). Whipped cottage cheese makes a silky dairy base that boasts an exceptional amount of protein and calcium. Blending in freeze-dried strawberries adds flavor and color, and folding in chopped fresh strawberries adds a final bit of texture and brightness. We spread it on toasted whole wheat English muffins and add a sprinkle of warm cinnamon. It's a combination offering an ideal balance of protein and fiber, making it a good choice for managing blood-sugar levels.

  1. Add the cottage cheese and freeze-dried strawberries to a food processor and process until smooth and bright pink. Add the maple syrup and vanilla and pulse until just combined. Transfer to a medium bowl and fold in the chopped strawberries.
  2. Divide the cottage cheese mixture between the English muffins (about 3 tablespoons per muffin) and sprinkle with cinnamon before serving, if desired.

Cook’s Note

Food Network defines diabetes-friendly as about 30 grams or less of carbohydrates per serving. If you have extra strawberry cottage cheese, refrigerate it in an airtight container for up to 4 days.
