3/4 cup extra-virgin olive oil

1/4 cup apple cider vinegar 

2 tablespoons agave nectar 

2 teaspoons Dijon mustard 

1 small shallot, minced 

Kosher salt and freshly ground black pepper

Favorite greens, for serving


  1. Combine the olive oil, vinegar, agave, mustard and shallots in a bowl and whisk until combined. Add salt and pepper to taste. Toss your favorite greens with this vinaigrette and enjoy!

Cook’s Note

For a super-easy summer salad, toss the vinaigrette with butter lettuce and top with fennel fronds and shaved Parmesan.
