2 red onions, peeled and sliced 1/2-inch thick

Olive oil

Salt and freshly ground black pepper


  1. Preheat a grill or a grill pan.
  2. Lightly brush the onion slices with olive oil. Place on the grill and cook about 6 to 8 minutes. Transfer to a cutting board and chop into bite-sized pieces or serve whole.
