Crispy Grilled Cheese with Mozzarella, Mushrooms and Blueberry Jam

I know this one sounds a bit weird, but you have to trust me on this. It’s super melty and earthy, with a touch of sweetness. Like the world's greatest mozzarella stick and grilled cheese mashup.

  1. Set up a grill with offset heat and hot coals.
  2. Brush the mushrooms with olive oil and season with salt and pepper. Grill over high heat until nicely charred and cooked through, 2 to 3 minutes per side. Remove the mushrooms from the grill.
  3. Lay down 4 pieces of bread on a work surface and spread the middle of each with jam, then top with some mozzarella and then the mushrooms, making sure to leave enough room around the edges to seal. Place a piece of bread on top and press down, then cut the crust and seal the edges as best you can.
  4. Set up a standard breading station: Add the flour and salt and pepper to taste to a shallow container. Whisk the eggs in a second shallow container and add the breadcrumbs and salt and pepper to taste to a third shallow container. Bread the sandwiches by first dipping them in the flour, then the eggs and finally the breadcrumbs.
  5. Place a large cast-iron pan on the grill, fill with 1/4 inch of olive oil and heat to 325 degrees F. Add the breaded sandwiches in batches, if necessary, and crisp until golden brown, 4 to 5 minutes per side. Remove to a paper towel-lined plate and let cool a bit. Cut open and serve…then watch everyone smile.
