Dates Stuffed with Goat Cheese in Bacon Brown Butter

I love dates used in savory cooking: From stuffed with almonds and wrapped in bacon in chutneys for pork or chicken, or these goat cheese-stuffed ones that are the perfect sweet and salty bite.

  1. Heat the grill with offset coals and dampers half open to 350 degrees F. Set a small cast-iron pan on the grill to preheat.
  2. Mix together the balsamic vinegar, parsley and orange zest and juice in a bowl. Set aside.
  3. Add the bacon to the hot pan and crisp for 5 to 8 minutes. Add the butter and let the butter melt and brown with the bacon fat for about 2 minutes. Pour the bacon and brown butter into the balsamic mixture and stir to combine. Lightly season with salt and pepper.
  4. Equally disperse the goat cheese among the dates, filling them as best you can. Place another small cast-iron pan off the heat, then add the dates slit-side up and close the lid. Cook until the dates soften and the cheese is warm and slightly melty, 4 to 5 minutes. Remove the dates onto a platter, then spoon the warm bacon-balsamic mixture over the dates to serve.
